Minestrone Soup

Minestrone Soup

I've tried this soup a few times now, and I think I've got it about right. It takes forever, but totally worth it. Filled with tons of vegetables. I freeze it in canning jars, it makes great lunches. The noodles absorb the liquid, so I have to make sure to put in a lot of liquid. Otherwise, there will not be enough broth. It takes up almost the entire stock pot. It usually fills about 8 large canning jars to freeze + enough for dinner that night.

Ingredients:
3 tablespoons olive oil
3 small cloves garlic, chopped (or 1/8 tsp garlic powder=1 clove)
2 onions, chopped
2 cups chopped celery
5 carrots, sliced
9-10 cans chicken broth (I sometimes use low sodium)
3-4 cups water
1 (14.5 oz) can tomato sauce (I also add 2 cans v8 juice)
1 cup canned kidney beans, drained
5 red potatoes
1 (15 ounce) can green beans
2 cups baby spinach, chopped
3 small zucchinis, quartered and sliced
1 tablespoon chopped fresh oregano (or 1 tsp dried)
2 tablespoons chopped fresh basil (or 1 TBSP dried)
salt and pepper to taste
Large shell pasta ( about 3/4 a package)
1 package of stew meat
grated Parmesan cheese for topping

Directions:
Cook your stew meat in the crock pot for 7-8 hours on low the night before or the morning of making the soup. I just add some water and sprinkle the meat with salt and pepper, and some garlic and onion powder.In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes. Add onion and saute for 4 to 5 minutes. Add celery and carrots, saute for 1 to 2 minutes.Add chicken broth, water, (v8) and tomato sauce, bring to boil, stirring frequently. Reduce heat and add potatoes, green beans, spinach leaves, zucchini, oregano, basil, salt and pepper. Simmer for 60-90 minutes. Add kidney beans about halfway through so they don't fall apart.While that is cooking, boil the pasta.When soup is done simmering, add stew meat and pasta. Serve in bowls with shredded parmesan cheese on top.

I can't believe Christmas has already come and gone. We had a great Christmas day with mom and dad, grandma and grandpa, and cousins. Lincoln was the center of attention, he loved every minute of it. We gave him some fun books, teething rings, and balls. Mostly, though, he just wanted to play with all the wrapping paper and cardboard boxes. We feel so blessed to have such wonderful family so close by. As always, we missed the barlows but are excited to hopefully see them this summer.

One of the best nights we had this week was when we stopped to help a man on the side of the road with his car. We ended up driving him to our house, giving him some warm soup, and taking him where he needed to go. He didn't speak much english and we don't speak much spanish, but it made us feel good to be able to help him. It helped us remember what Christmas is all about.

I haven't blogged for so long, I almost decided to give up on it completely. But for the sake of preserving family memories, I changed my mind. I have so much catching up to do, I don't know where to start. So sorry for the bombardment of pictures!

Lincoln is now 8 1/2 months and is growing faster every day. He scoots around the house so fast, I am on my toes constantly trying to keep track of him. He loves playing peek-a-boo, riding on daddy's shoulders, and getting attention from all the ladies at church. He is laughing or smiling most the time. His cheeks are so chubby, I probably give him 200 kisses everyday.
I love being a mother. For awhile there, I feel like I lost myself a little. Having a baby is harder than I ever imagined. But now I have found myself again in the midst of all the laundry piles stacking up, the stretch marks on my tummy and hips, the list of things-to-do with nothing crossed off, and the never-ending bags of dirty diapers to take out to the garbage. I have realized that I need to slow down, focus on the things that matter most, and enjoy the time that I have with just the three of us. I still have other hats I wear sometimes: the nurse, the relief society teacher, the sister and aunt, the neighbor, etc. But a mother is who I am now, and I wouldn't have it any other way.

Lincoln's blessing day was perfect. The whole day I kept thinking about how much I love him, and how much it means to me to know that our family is sealed together for eternity. It was so touching to see him surrounded by his dad, uncles, grandpa and great-grandpas who all hold the priesthood and are great examples for him.

Lincoln is SUCH a good baby. For the most part, he only cries when he is hungry or tired. He smiles a lot and is learning to use his voice. At 2 months old, these were his stats:

Weight: 9 lbs 7 oz 15%

Length: 22.5 in 50%

Head: 14.8 in 10%

One thing I have to write down so I don't forget it, is how funny it is when I am rocking him and we are both falling asleep. We just look at eachother as our eyes our drooping down and our blinks are getting longer, and then he smiles so big and we both start laughing.

since this baby boy came into our lives...just like everybody said it would. i have loved getting to know little lincoln these past 4 weeks. tomorrow he will be one month old, i can't believe it! he is a good baby and sleeps pretty well at night. he likes to look at my face while i sing him primary songs. he likes to be wrapped up tight and taken for walks outside. and one thing that is not so cute- he likes to squirt when i am changing his diaper.

Lincoln Richard Barlow

Born on March 25th, 2011

6 pounds 12 ounces, 18 inches long

We love him more than we could ever imagine and can't believe how perfect he is. It has been an overwhelming week, but we are grateful for everything we've experienced. The Spirit has filled our home. We feel like this little baby was meant for great things. We hope we can be the kind of parents he needs in order to do all that he was sent to do.

Baby Lincoln, we love you and are glad you are finally here.

Lincoln was jaundiced and had to spend the first few days at home under bili lights. We are glad to be done with them.

Surviving...

I am 36 weeks, I have reached full term! Finally! Although this is good, the thought of being pregnant for 3-4 more weeks makes me want to cry. Any words of encouragement are welcome. I don't know how people make pregnancy look so easy! The aching and swollen feet, heartburn, back pain, and not being able to sleep are my biggest complaints right now. And I was definetely not prepared for the hip aching- it's like i can literally feel my hips spreading apart! But everytime I start to complain, I remember how badly I wanted this and how blessed I am to have had a healthy pregnancy with no major problems.

I have had some fun showers (wish I would've taken pictures), and family/friends have been so generous & have given me so many cute things. Now I just have to survive the last few weeks, and pray that this little boy will come early!! It's getting hard to work 12 hour shifts, but I'm going to keep working until I have the baby. It is actually hilarious trying to take care of patients at the hospital. My patients are always telling me I need to sit down and rest for awhile. My 72 year old patient actually helped me up when I got down in a squatting position to pick something off the floor and was having a hard time getting back up!

So the only present we had under the tree was a $3.00 package of socks for our baby. But Christmas morning, look what Devin suprised me with! I LOVE them! I love fall. I wish I could've spent more time outdoors this season. It was still fun with general conference, salsa-making, butternut squash picking, byu football, and getting to listen to our baby's heart beat.

We finished the backyard! I shouldn't say we...really, it was all Devin. I've been no help at all lately, but my very manly husband has worked hard at finishing the sprinklers, and getting the grass and trees in.

I was finally feeling well enough to get up in the mountains and see the leaves. As we were hiking, there was this guy who kept popping up along the trail asking if we wanted him to take a picture of us. Kinda creepy, but nice i guess.

This is me at 18 weeks. I'm definetly in the fat, akward stage.

Pregnancy has had its ups and downs. The headaches and nausea have been the hardest thing for me. The fifth month has been a little better, so hopefully there are more ups than downs

from now on. Here are some things I have learned along the way:

-Keep soda crackers, ice chips, and a cold washcloth at your bedside at all times.

-Get extra pillows.

-***ALWAYS keep a puke bowl or bag in your car ***

-Try not to feel sad about having terrible acne and about crying at the dermatologist's office.

-Keep jolly ranchers in your pocket to counteract the constant bad taste in your mouth.

-Do not attempt to insert or pull a nasogastric tube when taking care of patients at the hospital.

-When you prepare a meal, don't expect to feel like eating it when it's finally ready.

-Don't feel bad when someone says to you: "You're starting to look a little thick in the waist." (Yes, Tarisa, someone said that to me too).

-Lastly, do not go searching through textbooks/internet and get worried about every symptom you may or may not be experiencing.

summer festivities

Wow, I really dropped out of the blogging world there for awhile. But I'm back! Here are some things we've been up to:

At the end of April, I went to Baltimore to attend a conference for work. The hospital I work at is trying to focus on improving care for the elderly. I am currently working on becoming a GRN (Geriatric Resource Nurse). Although it can be challenging at times, I have loved working with the older patients and learning about how I can take better care of them and their families while they are in the hospital.

Devin is studying for the first test of the CPA Exam. He takes his first test July 17th, wish him luck!

We planted our first vegetable garden in May. We had no idea what we were doing, but it was fun. It was hard to believe that anything would really grow from those tiny seeds.

A couple of friends came over to visit me, and we made delicious crepes with fruit. Mmmm.

We finally got grass in our front yard! It's starting to look like a real home now.

I planted some flowers, and once again had no idea what I was doing, but I'm learning. I don't know what is so fun about digging in the dirt all day, but I love it. It's such a good excuse to go outside instead of staying inside and cleaning my house.

We went to Jackson Hole for Devin's birthday. We had to cut the trip a little short, but it was still fun! We went river rafting and made tin foil dinners afterwards.

Thanks Travis for being the sacrificial lamb. Our raft was filling up with water, so we had to stop and dump it. The water was so cold.

yes, I have a heart condition

Well I have some catching up to do. The past couple months have been a little tough, but also filled with lots of blessings. Here is the story for those who wanted to hear it:

Ever since I was little, I've had these crazy heart palpitations where my heart would start racing. They would never last very long at all, and they didn't come very often, so I never had it checked out. Well, during the first week of March, I was at work one night and my heart started doing it again. So we hooked me up to the telemetry monitor and found out that my heart rate was almost 200 and that I was in a slightly dangerous rhythm called SVT (supra-ventricular tachycarda). I thought that my heart would slow down like it normally does, but this time it didn't. So after about 40 minutes, I gave in and went down to the ER where they could give me an IV drug called adenosine to basically stop my heart and restart it. It was a little scary and it felt awful.

To make a long story short, after another trip to the ER, I met with a cardiologist who said that I had an extra electrical pathway in my heart. He said that it is somewhat common and that I was probably born with it. So I decided to have a procedure called a catheter ablation done. It has a 95% success rate for my condition. They stuck a catheter through my neck and groin, and ran it into my heart. Then they mapped out my heart's electrical system. Once they found the extra pathway, they cauterized it, which eliminated the heart's ability to go back into SVT.

So...hopefully I am cured for life and will never have to deal with that again! If there is any heart condition to have, I'm glad I had this one because it is very treatable. I'm very grateful for all of your prayers and fasting, it really did help me. I've noticed so many little blessings in my life lately that I know have come from Heavenly Father. Because of all of these little tender mercies, I have been able to feel very calm and to know of a surety that He is watching over me, which is such a comforting feeling to have.

Anyway, I'm feeling much better and am excited to have this new house- Katie you asked for some pictures of the house, here are a few!

Devin and I went to Oregon over New Years. It was so fun to be with

his side of the family because we don't get to see them very often.

What else could you ask for? This holiday season was one of the best ever.

It started out with a great Thanksgiving. We played a game of Ultimate Frisbee in the morning.

The BYU football season was great this year. The best part was getting to hang out with the biggest BYU fan in our family: my grandpa. This picture was taken after watching

Then in December we were able to see the Christmas concert again, and go out to dinner with friends.

Christmas eve at my grandma's house was so fun. We always eat dinner, do the nativity scene, and then have a little talent show.

Christmas morning- I didn't think that Santa would come when you are married and you don't have any kids. But I was wrong, he came.

They have just started building our house. We keeping driving up to Farmington every day to see what new things have been done.

It has been almost 1 year since we were here...

I cannot believe how fast time has gone by. I am so overwhelmed with how much we have been blessed with this year. I am grateful to be going through life with Devin, and I can't wait to see what another year will bring us. I love you Dev!

Devin and I have been so busy with work! I keep trying to tell myself that it will be worth it, because the money is helping us save up for a down payment on a house. So far it is working, and I've been able to just keep plugging along. Bring on more 13 hour night shifts!!

Because of the lack of excitement in our lives lately, I have nothing new to write about, but I thought I'd record some thoughts I've had. Because I missed part of general conference, I was reading through the talks and finally came to President Monson's closing remarks:

"We live at a time when many in the world have slipped from the moorings of safety found in compliance with the commandments. It is a time of permissiveness, with society in general routinely disregarding and breaking the laws of God. We often find ourselves swimming against the current, and sometimes it seems as though the current could carry us away..."

"...I am reminded of the words of the Lord found in the book of Ether in the Book of Mormon. Said the Lord, “Ye cannot cross this great deep save I prepare you against the waves of the sea, and the winds which have gone forth, and the floods which shall come.”¹ My brothers and sisters, He has prepared us. If we heed His words and live the commandments, we will survive this time of permissiveness and wickedness---a time which can be compared with the waves and the winds and the floods that can destroy. He is ever mindful of us. He loves us and will bless us as we do what is right."

I feel like I have found myself swimming against the current lately. I'm finally getting my turn to experience what it feels like to be the one who is different... even here in Utah. Although I'm definitely not perfect at it, I'm learning that I need to stand up for what's right, no matter what other people think of me.....which has been hard because, I'll admit it, I'm such a people-pleaser. I'm grateful for my husband, and good family and friends who are great examples of this, and for the little reminders that the Lord really is mindful of me.

I almost forgot, we did find time in October for a weekend trip to the Bear River Cabin and had a great time even though it was cold!

We have been house hunting. This is the home we bought!!

Okay, just kidding. We haven't bought a home yet, and we probably won't for a while longer. Looking for houses can be very time-consuming! It's such a big commitment, and there's so much to think about! But I am happy where we are at right now, I love my ward and friends here, and I feel like the Lord truly placed us where we needed to be.

Devin G...

Right now I am sitting in Devin's office at work, waiting for him to finish up so we can go outside to the Kenny Chesney concert. While I have been emailing and looking at blogs, Devin has been flying around answering everyone's questions, talking to the bank, talking to people about financial things I don't even understand, helping people with their tickets, and meanwhile anwering his phone which rings at least once every minute. Everybody here seems to know him and respect him. I am just amazed at how hard he is willing to work.

He has worked long hours every day this week, and he has still been working like crazy today on the 24th of July. It seems like everybody is demanding his attention, and yet, he found time to take me to get some dinner, buy food for other people, and then park my car so I wouldn't have to walk a really long way to the stadium. And even though he will be exhausted tonight, I know he will come home and help me with laundry and dishes, read his scriptures, and say prayers, because that's what he does every night. I have always said that "Devin G is such a good man," but I didn't know just how good until I saw how much he consistently thinks about others, and how little he thinks about himself. He is incredible. Devin, I love you.

Questions...

...Should we get a car or a computer first? Or what about a house? Can we even afford any of this? Where are we going to be in five years? ...those are the questions.
The past couple of weeks have been filled with nightly budgeting sessions. This is how it usually goes: Devin has his "Family Cash Flow" pulled up in an excel spreadsheet on his laptop. I have my planner in hand. Devin uses his accounting vocabulary to try to sound impressive, throwing out words
like, "assets," "expenditures," "financial forecasting," etc. He tries to explain to me the very basics of managing personal finances. But really, I know that we are both trying to reach the same objective, which is: increasing the amount of money we have in our bank account at the end of the year.
Before I got married, I had no idea how many expenses there would be to juggle. I didn't have any understanding of how to manage money, becuase I didn't have any! Life was simple with only enough in your bank account to get you a week's worth of groceries and a drive home. Hopefully we will get the hang of all this as time goes on!

Well, somehow I developed dry sockets from the wisdom teeth extraction, even though i've been very careful. Not a fun thing. But, on the bright side, it has given me some extra time to study for my final and to do some more blogging! It also gave me a great excuse to stay home from work this weekend, which means I can watch general conference! I'm really excited, since watching it on tv in patients' rooms at the hospital while pushing IV medications is never quite the same experience.

wisdom teeth

this weekend, I got my wisdom teeth taken out. it's been rough, but my sweet husband has been by my side to take care of my every need. he has slept on a mattress on the floor for three nights in a row, just in case i woke up and needed anything. i am lucky to be married to such a good man. for obvious reasons, i will not post a picture of me, you'll just have to imagine how rediculously large my cheeks are.

Me and dev had a really fun weekend, so I guess that's something to blog about.

First, some of our friends came over Friday night. We made fondue and other treats, and then played games. I love being with these girls. We were all roommates together at BYU Idaho. It's good that our husbands get along, becuase I think we'll be friends for a long time!

Then on Saturday morning we went to Devin's Elders Quorum basketball game, and after that, we played tennis outside because it was such a warm day! He might be mad at me for posting this, but I felt good after I beat him.

And we also played lots of Wii tennis. My arm is sore from playing too much wii. What a fun weekend.
I also wanted to post some pictures from when we went to Oregon for the open house a few weeks ago. We had fun with Devin's family and wish we could visit more often.

Devin and I are married now, and it is so fun! The wedding day was freezing cold, but it was beautiful and we loved every minute. These are just a few pictures, I will post some more when we get them. We were so glad to have Devin's sister in law, Shonda, there to take the pictures, she's amazing! We went on our honeymoon to Park City and are now living in Bountiful. Devin is still working in accounting for Real Salt Lake, and I am going to keep working at LDS Hospital part time while I finish school online.

Yes yes...we are really getting married and starting our very own blog! We can't wait to start this new chapter of our lives and to finally be with each other forever. We'll be getting married on January 3rd, 2009 in the Salt Lake temple, with a reception in Bountiful that same night.
